As most of you know, my buttercream frosting is one of my go-to recipes. It really adds so much flavour to cakes and cupcakes. The only thing that my buttercream frosting cannot do is be completely white. Because of the butter, it will always be somewhat yellow-ish, which I know can be frustrating if you’re trying to achieve certain frosting colours. Today, I have the perfect recipe that will give you a pure white frosting! The twist…? It can be done in 7 minutes! This is my 7 Minute Frosting for the Sweet Celebrations cookbook.
- In a large saucepan, bring 2 inches of water to a boil over medium heat, then reduce to a simmer.
- In a large heatproof bowl, combine the egg whites, the pot of simmering water, without the bottom of the bowl touching the water, and with a handheld mixer beat on a medium speed until the mixture is thick and fluffy, and soft peaks form, similar to the marshmallow creme. Depending on your mixer strength, this could take 7-10 minutes.
Tip: Turn to this recipe when you need a frosting that is super white. A buttercream can never be “true white,’ because of the butter (and some people find it a little grainy), so when you’re looking for a really white frosting that is ultra smooth and silky, this is for you.
