The man, the myth, the legend Homer Simpson loves his donuts. It’s a staple to his character! Today, I’m making a cupcake recipe that Homer Simpson (and all the donut lovers) are going to love! These are my Jelly Donut Cupcakes! If you LOVE donuts, check out my Giant Donut Pinata, and my Donut Drip Cake.
Remember, for this recipe you’ll be making cupcakes AND donuts! All the ingredients are included below. For this recipe, I used raspberry jam to fill the donuts. If jelly filled donuts aren’t your jam (haha), then you can do without it, but I think you’ll be missing out on extra sweetness! YUM!
Instructions:
- Preheat a moderate oven (175C/350F).
- Add eggs, vanilla essence, oil, and sugar to an electric mixer. Start on a low speed an increase gradually. Beat until it’s light and fluffy.
- Add flour, milk, and cinnamon nutmeg spice mix. Beat on a low speed to incorporate all the ingredients. Increase the speed and beat for just 30 seconds.
- Spray nonstick spray onto donut pan.
- Place some of your cake mix into a snapseal bag. Cut a generous tip from the corner. Fill six donuts with batter from a snap seal bag.
- Use an ice cream scooper to scoop batter into 6 of the cupcakes.
- Fill in the rest of the donuts and cupcakes. You want to make sure you have enough cupcakes for each donut.
- Bake donuts and cupcakes in a moderate oven. The cupcakes take 14 minutes to cook, and the donuts take 7-10 minutes. They are done when the center springs back.
- Use a spatula to scoop the donuts out of the tin. Then, place a donut in the cinnamon sugar mixture. Don’t put any cinnamon on the base of the donut.
- Whip butter and vanilla extract on a high speed for 3 minutes.
- Add a cup of powdered sugar. Mix on a low speed to begin, and increase the speed gradually. Whip for another 3 minutes.
- Add the rest of your powdered sugar and cinnamon spice and continue to beat.
- Once you’re towards the end of completing your frosting, add a bit of milk. Less milk=thicker. More milk=thinner.
- Place half of your frosting in a bowl and microwave for 30 seconds. Place the other half in a snap seal bag.
- Place a few drops of food coloring and stir through until it’s completely mixed.
- Spoon pink frosting over the top of each donut. Let the frosting drip down the sides. Sprinkle sprinkles over the top of the frosting.
- Place your raspberry jam into a snap seal bag. Cut a fine tip from this bag. Cut a generous tip from the buttercream frosting in a snap seal bag.
- Use a serrated edge knife to core a center out of the middle cupcake.
- Pipe the center core of each cupcake with raspberry jam.
- Pipe a circle of buttercream frosting around the top of the cupcake.
- Place a donut on top of each donut.
- Pipe raspberry jam to the center of each donut, as well.

- 260g / 9oz Plain flour, sifted
- 225g / 8oz Caster sugar (USA – granulated)
- 250g / 8.8oz Butter, softened
- 110g / 3.8oz Whole milk
- 3 x 65g/2.2oz Eggs, room temperature (ex-large)
- 40g / 1.4oz Vegetable oil
- 3 tsp Baking powder
- 1 tsp vanilla
- 1.5tsp cinnamon powder
- 0.5tsp ground nutmeg
- Additional 1/2 cup caster (superfine) sugar mixed with additional 1.5tsp cinnamon & 0.5tsp nutmeg for rolling your donuts
- 1 cup good quality raspberry jam/jelly
Frosting Recipe:
- 650g / 1lb 7oz Powdered sugar
- 225g / 8oz Butter, softened (eqv. 2 sticks)
- 1tsp vanilla
- 1-2 tbsp Whole milk
- 1.5tsp cinnamon powder
- 0.5tsp ground nutmeg
- Cupcake tray
- Cupcake liners
- Donut pan
- Nonstick spray
- Rainbow sprinkles
- Pink food coloring
- Large spoon
- Ice cream scoop
- Scissors
- Spatula
- Snap seal bags
